Crispy Berry and Oat Parfaits

INGREDIENTS

3 tbsp coconut oil

1½ cups oats

2 cups mixed berries (frozen or fresh)

1 grated apple

1 tsp vanilla

½ tsp cinnamon

2 tbsp maple syrup

4 tbsp coconut flakes

1 cup coconut yogurt (optional)

METHOD

In a pan, melt the coconut oil, add the oats and brown them for a few minutes. Mix the berries with the grated apple, vanilla, cinnamon and maple syrup. Fill the berries, the coconut flakes and the oats in layers into ovenproof glasses and bake for 15 minutes at 360 degrees Fahrenheit. Serve with coconut yogurt.
