I am definitely obsessed with cashew ice cream; it really changed my desserts since it is so easy and delicious. Love it!
New Things to Try
I love trying new superfoods! My last two food discoveries have been reishi and blue spirulina. I love to have reishi with my golden milk at night after a long day. I feel that I am cleaning and detoxifying myself; it tastes amazing too—the flavor is really similar to chocolate! I really enjoy blue spirulina in ice creams; my favorite combo is blue spirulina mixed with coconut ice cream and some mango. So delicious!
When I feel that I need to detox, I like to have a really powerful juice in the morning made with beetroots, broccoli, lemon, pineapple, turmeric, cucumber and spirulina.
How Food Impacts Health
Changing the way that I eat totally changed my mood and my energy. I used to be really tired after eating, but since I switched to my vegan diet I feel so much more energized and fresh. My overall health just improved, as did my skin and my hair. I never imagined I could enjoy food as I do! I love to make my own food and try different recipes.
Waffles and Strawberry Nice Cream Sandwich
½ cup oats
1¾ cups oat flour
1½ tsp baking powder
Pinch of Himalayan salt (you could use sea salt too)
1¼ cups almond milk
¼ cup coconut oil
¼ cup agave syrup
4 frozen bananas
2 cups frozen strawberries
½ vanilla bean
½ cup coconut cream
Chopped dehydrated raspberries
Start by adding the ingredients for the waffles in a blender, then pour the mix in the waffle maker. To get them extra crunchy, leave them a bit longer. To make the nice cream, blend the ingredients until you get a smooth consistency. I used a rounded mold. If you want to get the same shape, put the nice cream into the mold to give the desired shape, then remove the mold and make your nice cream sandwiches. Once done, roll the sandwiches and add the topping. Enjoy!
Banana Vanilla Nice Cream with Ginger
8 frozen bananas
2 pitted dates
½ vanilla bean
1 tsp cinnamon
Bit of ginger
¼ cup grated black chocolate
2 cookies of your choice
In a blender, add the bananas, dates, vanilla, cinnamon and ginger and blend until you get a smooth consistency. If the bananas are too frozen, you can add just a bit of almond milk to help with the blending process. Once the banana nice cream is ready, serve in two jars. Add some grated chocolate and a cookie in each of them. Enjoy!
