I love green smoothies. I think it’s the best thing when I want to take care of my body and it gives me the vitality I need all day. I also enjoy eating avocado toast. It’s so good!
My latest food discovery is nut butter. I discovered it a while ago and became addicted. I make a lot of recipes with it and put it on everything. My last recipe was a vegan almond butter and chocolate brownie. It was so delicious and my omnivore family liked it.
1 cup raw cashews, soaked overnight
¾ cup almond milk
½ cup raw cacao powder
1 tsp vanilla extract
2 tbsp agave syrup
1 tsp melted coconut oil
1 tbsp almond butter (or nut butter)
Rinse and drain the cashews. Blend the cashews with all the ingredients, except the coconut oil, until smooth. Then stir melted coconut oil into the mixture until incorporated. Pour the mixture into 6 cupcake molds. Decorate with berries. Freeze for at least 2 hours.
