Almond Pancakes

Slow living

There is nothing more relaxing for me than spending time alone with my animals. They give me this unique calm and peaceful feeling. No matter how bad the weather is, a walk with my dog is more wellness to me than a spa could ever be.

 

INGREDIENTS

Pancakes

130 g flour

15 g starch

25 g sugar

2 tsp baking soda

50 g melted coconut oil

140 g almond milk

1 tsp vanilla

 

Topping

Soy yogurt

Blueberries

Almonds

Banana

Maple syrup, if needed

Coconut oil for the pan

 

METHOD

Mix all the dry ingredients for the pancakes. Add the almond milk, oil and vanilla, and stir. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle. Brown on both sides. Serve with soy yogurt, blueberries, banana slices, some almonds and maple syrup, if needed.
