Cinnamon Pumpkin Waffles

Detox + energy

Try a tea of herbs harvested in the forest, with ginger and a little sweetener. It’s very simple, but works great for recovering energy and cleansing the body.

Try more hemp oil + milk

Until a few months ago I did not know that hemp oil and hemp milk existed. Tasty and full of nutritional benefits, they've quickly become part of my regular diet.

Add vegetables to your desserts

Add pumpkin, sweet potato, carrot and zucchini to cakes, cookies, pancakes and more. The best brownies in the world are with sweet potatoes. I regret not discovering this sooner!

Use more cardamom

Cardamom is often known for its use in savory Middle Eastern dishes, but it also goes great in desserts and breakfasts. It might sound strange to add green cardamom to an Italian vegan panna cotta, or cardamom and allspice to pancakes, but it's really quite heavenly.

Baking cakes + parchment paper

If you are baking a cake and it is cooked outside but still wet inside, cover it with parchment paper; this will allow the dough to cook inside. I recently learned this when the cake I baked for my sister’s birthday was raw inside and crunchy outside! This solved the problem, and my whole family told me the cake was very tasty!

INGREDIENTS

Wet

1½ cups roasted pumpkin puree

¼ cup melted coconut oil

½ cup coconut or muscovado sugar

¹⁄³ cup almond milk

Dry

1 cup oatmeal flour (oats turned into flour)

½ cup brown rice flour

1 tsp baking powder

1 tsp baking soda

2 tsp ground cinnamon

Pinch of sea salt

METHOD

Turn on the waffle maker. Put the wet ingredients, including the sugar, in a bowl and beat well. Add the dry ingredients and beat again. Let stand until the waffle maker is hot. Once the waffle maker is hot, put the mixture in the center (my waffle maker uses ½ cup of mixture per waffle) and cook until it is crispy on the outside, about 5 minutes.

Note: Cooking times and amounts vary for different waffle makers. Follow the manual or your experience for time, temperature and amounts.
