Stick to the Staples

I think the simple things are often underused, especially when we try to cook healthy and clean. We don’t need exotic fruits or veggies all the time. Apples, pears, berries, cabbage and potatoes, for example, are my all-time favorites and always will be.

 

Keep It Simple

I swear by keeping it all simple. Even a big, delish burger can be broken down in simple but healthy parts. I don’t like using exaggerated and fancy food to create meals.

 

Salad 2.0

Mix olive oil, agave syrup, lime juice, vinegar, salt and pepper. Fold some sliced dried tomatoes in it. It takes the salad to the next level.

Mediterranean Quinoa Bean Salad

 

 

INGREDIENTS

2¾ oz raw quinoa

8½ oz water

2 big handfuls bush beans

1½ oz dried tomatoes

2 spring onions

1 peach

1 lime

4 tbsp olive oil

2 tbsp vinegar

1 tbsp agave syrup

Salt & pepper

Fresh mint, to top

 

METHOD 

Cook the quinoa in salted water until al dente. Set aside. Chop the dried tomatoes. For the dressing, mix together lime juice, vinegar, olive oil, agave syrup and some salt and pepper. Fold in the dried tomatoes. Slice the spring onions and the peach. Cook the beans in salted water for 4 minutes. Throw the quinoa, beans, spring onion and peaches into two bowls and mix. Pour the Mediterranean dressing over it. Top with some fresh mint leaves.

Perfect Egg Replacers

When it comes to baking, I prefer applesauce as an excellent egg replacement. You also can use mashed banana. But if you don’t want your strawberry pie to taste like banana heaven, use applesauce.

 

Freeze your Bananas

It’s not really a new thing, but many of my Instagram followers told me that they didn’t even know that you can freeze bananas. I always have a bag of sliced bananas in my freezer. Especially during summer and autumn, frozen bananas are a rich and healthy way to produce a vegan ice cream. Just blend them with some plant-based milk.

Cherry Limeade

 

INGREDIENTS

7 oz fresh sweet cherries

4½ oz water

2 limes, zest & juice

½ tsp ground ginger

17 oz club soda

2½ oz date syrup

 

METHOD

Wash and pit the cherries. In a medium saucepan, add the cherries, water and ginger powder and simmer for 15 minutes. Let it cool a few minutes and place the mixture into a blender. Add lime juice, lime zest and date syrup. If you don’t have date syrup, you can use maple or agave syrup instead. Fill some crushed ice into 4 glasses, pour the berry lime mixture over it and fill with club soda.
