Fun Family Carrot Dogs

INGREDIENTS

4 big carrots

4 hot dog buns

¼ red, yellow and orange bell pepper, chopped in small pieces

1 avocado, sliced

2 spoons vegan pesto

Vegan mayo

Olive oil

METHOD

Preheat the oven to 400°F. Roast the carrot with 2 spoons of olive oil for about 30 min or till tender. When the carrots are nearly ready, warm the buns on a grill pan until they get a bit crispy and the black stripes start to appear. Once the carrots are ready, grill them on the grill pan until you see the black stripes. Open the bun and fill it with vegan mayo. Place the sliced avocado and then the carrot. Add ½ spoon of pesto and the chopped bell pepper. Serve hot and enjoy!
