I used to think coconut milk is only used for main meals like curry, but they can also be incorporated into many baked goods such as tarts and bread. A tip I have is to leave the cans of coconut milk or cream in the fridge as it helps in separating between the coconut itself and the water.

Serves 9

 

INGREDIENTS

 

1 cup gluten-free flour
̈1⁄3 cup organic coconut sugar
̈2⁄3 cup cacao powder
̈2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water,

mix well and let sit for at least 15 minutes) ̈1⁄2 cup cashew milk
̈5 tbsp coconut oil, melted
̈1 tsp vanilla extract

̈1 tsp baking powder
̈1⁄2 cup dairy free chocolate chips

 

METHOD

  • Preheat oven to 350F. Line a 9x9 brownie pan with parchment paper or spray with oil.

  • In a bowl, combine flour, sugar, cacao powder, and baking powder together.

  • In a separate bowl, combine flax eggs, cashew milk, coconut oil, and vanilla extract together. Slowly add in flour mixture and mix until evenly combined. Add in chocolate chips.

  • Pour into pan and bake for 15 minutes. Let cool before cutting. Enjoy
