I used to think coconut milk is only used for main meals like curry, but they can also be incorporated into many baked goods such as tarts and bread. A tip I have is to leave the cans of coconut milk or cream in the fridge as it helps in separating between the coconut itself and the water.

1 cup gluten-free flour
̈1⁄3 cup organic coconut sugar
̈2⁄3 cup cacao powder
̈2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water,
mix well and let sit for at least 15 minutes) ̈1⁄2 cup cashew milk
̈5 tbsp coconut oil, melted
̈1 tsp vanilla extract
̈1 tsp baking powder
̈1⁄2 cup dairy free chocolate chips
Preheat oven to 350F. Line a 9x9 brownie pan with parchment paper or spray with oil.
In a bowl, combine flour, sugar, cacao powder, and baking powder together.
In a separate bowl, combine flax eggs, cashew milk, coconut oil, and vanilla extract together. Slowly add in flour mixture and mix until evenly combined. Add in chocolate chips.
Pour into pan and bake for 15 minutes. Let cool before cutting. Enjoy
