Continuing a plant-based lifestyle has made a big difference in my life. A couple months ago, I’ve had a lot of digestive and skin problems such as bloating, stomach pains, acne and rashes. After gradually reducing my consumption of processed foods, dairy, gluten and refined sugars many of those problems began to disappear and I feel better than I ever had before. Since then, I introduced more whole foods into my meals and continue a plant-based lifestyle because of its many health and environmental benefits. I not only want to honor my body but also, want to help the environment and others.

Serves 2

INGREDIENTS

̈1 cup chickpea flour ̈1 cup water ̈1 tbsp extra virgin olive oil ̈1⁄2 tsp salt and black pepper ̈4-5 asparagus thinly, sliced ̈4-5 heirloom cherry tomatoes, sliced

METHOD

  • Preheat oven to 450F. Add 1⁄2 tbsp. olive oil into a skillet.

  • Combine flour, water, and 1⁄2 tbsp oil together. Mix well until no clumps are visible. Let sit for 30 minutes.

  • Place skillet in oven for 10 minutes. Remove from oven and pour batter into skillet. Top with asparagus and tomatoes.

  • Bake for 15 minutes.Let cool before slicing and enjoy!
