275 g flour
150 g vegan cream cheese
100 ml coconut oil
200 g sugar
1 tbsp baking powder
Juice of 1 lemon
Zest of 1 lemon
150 g icing sugar
Juice of 1⁄2 lemon
Preheat the oven to 390°F and oil a 500 g loaf tin.
Put the flour, baking powder, sugar and lemon zest together in a large bowl and mix it.
After this, add the lemon juice, coconut oil and about 150 ml of water and mix everything until it’s smooth.
Put the dough into the tin and bake it for about 30 minutes.
Put the cake aside and let it cool down.
In the meantime, put the icing sugar in a bowl and add lemon juice until the icing has the right texture. Finally, pour it over the cake and enjoy it.
