INGREDIENTS

1 & 1⁄2 cups all-purpose flour

1⁄2 cup warm water 1 tsp yeast 2 tbsp sugar

A few drops of vanilla 3 tbsp oil 1⁄2 cup icing sugar

Some water

METHOD

  • Activate yeast by mixing with warm water and sugar. Let it sit for a few minutes.

  • In a large mixing bowl, combine yeast mixture, oil and vanilla. Whisk until smooth. Then gradually add the flour and stir well. Add more flour if needed until a soft dough is formed. Place the dough onto a floured surface and knead until fairly smooth.

  • Then place back into the bowl, cover with a clean towel and let rest for 1 hour or until doubled in size. Spread the dough on a floured surface and roll the dough out to 3⁄8-inch thickness.

  • Cut the dough using a doughnut cutter (or a mason jar lid for the outer edge and a pastry nozzle for the inner edge). Do not throw away the doughnut holes!

  • Put the doughnuts on a floured baking sheet, cover with a clean towel and let rest for 1 more hour.

  • Meanwhile, prepare the glaze by mixing icing sugar with some water.

  • When the doughnuts have risen, heat a pan with enough oil and fry them at 375C.

  • Cook them for about 30 seconds and flip until both sides are golden brown.

  • Remove carefully with chopsticks and let drain on the wire rack.

  • Glaze and let them cool before eating.
