Sweet Potato & Caramelized Onion Burger

INGREDIENTS
 

1 sweet potato

1 onion

2 tbsp red wine (optional)

Arugula

̈Burger buns
 

METHOD

  • Heat oven to 390°F.
     

  • Cut the sweet potato in half or in small pieces and bake until tender (for 30-40 min).
     

  • Slice the onions into thick slices. In a saucepan, heat olive oil over medium-low heat. Add sliced onions and stir.
     

  • Let them cook for 10 minutes and add red wine (optional). Cook for another 10 minutes or so, stirring occasionally until the onions caramelize.
     

  • Prepare your burger with mashed sweet potato, caramelized onions and arugula.
