1 sweet potato
2 tbsp red wine (optional)
Heat oven to 390°F.
Cut the sweet potato in half or in small pieces and bake until tender (for 30-40 min).
Slice the onions into thick slices. In a saucepan, heat olive oil over medium-low heat. Add sliced onions and stir.
Let them cook for 10 minutes and add red wine (optional). Cook for another 10 minutes or so, stirring occasionally until the onions caramelize.
Prepare your burger with mashed sweet potato, caramelized onions and arugula.
