1 & 1⁄2 cups red lentils
6 cups vegetable stock
2 large sweet potatoes
3 tbsp vegan Thai red curry paste
3 cloves garlic
1 can diced tomatoes
Dice your onion and garlic cloves and brown in a pot with a bit of olive oil.
Then add the rest of the ingredients, stir and cook on medium heat for 30 minutes.
