Pumpkin Pie Waffles

INGREDIENTS 1 cup spelt flour 1⁄4 cup coconut flour 2 tbsp coconut sugar 1 tsp pumpkin pie spice 1 tsp baking powder 1 tbsp cashew butter 3 tbsp pumpkin puree 1 1⁄2 cups almond milk 1 tsp apple cider vinegar Coconut oil for the waffle iron

METHOD

• Combine spelt flour, coconut flour, coconut sugar, pumpkin pie spice and baking powder.

• Add the remaining ingredients and combine to a smooth, slightly firm batter. Grease the waffle iron with some coconut oil and pour in the batter.

• Bake the waffle until it’s slightly brown and crispy.
