Purple Sweet Potato Pizza Crust

INGREDIENTS

1 cup whole wheat pastry flour 1 cup mashed purple sweet potatoes 1⁄4 tsp adobo seasoning 1⁄2 tsp oregano ̈Pinch of salt

METHOD

  • Preheat oven to 400°F.

  • Combine flour and seasonings in a medium bowl. Add in sweet potato and start to knead the flour into the sweet potato to form a smooth dough. If dough is dry, add 2 tbsp of water at a time to form dough.

  • Place dough on a flat floured surface, and with a rolling pin or your hands, begin to flatten it into a pizza crust shape.

  • Place dough on a lined baking sheet and cook in the oven for about 13-15 minutes.

  • Remove crust from oven and top with additional sauce, veggies, vegan cheese and plant proteins like beans or tempeh.

  • Place pizza back in the oven for another 5-8 minutes to help warm veggies and melt the vegan cheese. Cut into equal pieces and serve.
