Vegan Syrniki (Russian "Cottage Cheese" Pancakes)

INGREDIENTS
 

8 oz extra firm tofu, crumbled
Juice and zest of 1 lemon
3⁄4 cup rice flour
3 tbsp coconut sugar

1⁄2 tsp baking powder
1 tsp vanilla extract
1 tbsp coconut oil

 

METHOD

  • Add the crumbled tofu, lemon juice, lemon zest, rice flour, coconut sugar, baking powder and vanilla extract to a mixing bowl and mix the ingredients well.
     

  • Divide into 7-8 portions and form into thick disk shapes.
     

  • Melt the coconut oil in a large frying pan and cook the syrniki for 5-7 minutes on each side.
     

  • Serve immediately with toppings of your choice.
